With lots of spices, condiments, rich in colour, flavour and aroma, Keralite cuisine is one of the most popular cuisines all over the world.
Known for its vast expanse of greenery, tender coconut, Ayurveda, the sea, beaches and beautiful churches, Kerala is a one stop destination for all. But let us take you on a tour on the history of Keralite cuisine.
Kerala has been one of the hotspots of the country since time immemorial. It is therefore, important to begin with the history of this state as believe it or not, history can influence eating habits, just as it influences people.
Kerala is known to have several mythical as well as historical facts about its origin. In fact, the earliest written records are dated as back as the 2nd and the 4th century BC. Its strategic location at the southern tip of India, nestled very close to the Malabar Coast, has attracted several explorers to Kerala. One such explorer whose is remembered in the cosy Fort Kochi area in Kerala is Vasco Da Gama. In fact, Fort Kochi itself dates back to the 15th century that coincides with the advent of the Portuguese. Soon Fort Kochi evolved as one of the prime ports of that time, attracting the Dutch to the final arrival of the British. Kerala is a confluence of Christian, Hindu and Muslim population that leaves it tinge in the cuisines as well. Apart from this, the Portuguese, Dutch and European influences have also left an indelible mark on Keralite cuisine.
Cooking food/ meal – Pachakam
The very act or preparing or cooking a meal is known as pachakam in Malayalam, the local language of Kerala. The food items have a distinct flavour of spices and of course, the coconut!
Spices play a pivotal role in Keralite cuisine. From small onions or shallots, to cocumstar, red chillies and red chilli powder, cinnamon, cardamom, ginger, cloves, garlic, coriander and cumin makes their cuisine spicy, tangy and lip smacking.
Sea food is a staple diet, along with beef, pork, poultry and mutton in the non-vegetarian sections. Karimeen or the pearl spotted fish is a rare and expensive fish here. Kerala and neighbouring Tamil Nadu share a long history of cultural exchange, making it plausible that puttu originated in either region.
From A Farmer’s Necessity to Culinary Delight
Traditionally, puttu was a dish of necessity. In Kerala’s agrarian society, farmers and labourers required a portable, nutritious, and quick breakfast to fuel their long days. Kerala’s abundance of rice made it a practical and affordable base for puttu . Bamboo or coconut shells for steaming highlighted the resourcefulness of their creators. The simplicity of the recipe, using readily available rice and coconut, made puttu the ideal solution.

In Kerala, northern people and tribal people are fond of eating Meat. So the food recipes do not end with chillies, mustard seeds, tamarind and curry leaf.
Sadya Special Food of Kerala

Kottu Curry:

Tangy Rasam:
Tangy Rasam is another famous dish. Chilly peppercorn powders and tamarind juice are used to prepare Rasam. First, chilly peppercorns are boiled in diluted tamarind juice. Finally, the pulissery buttermilk is mixed with it.
Banana chips:
Banana chips are a very famous recipe in Kerala. These chips are fried deeply in coconut oil and covered with sugar or honey. Some Banana slices are added with salt and spicy for better taste and covered with chocolate flavours. These Banana chips have a great demand not only in domestic areas but also in international markets.
Payasam is an item of Kerala’s unique sweets. This is made with Rice, Wheat or Vermicelli. First, Rice, Wheat, and Vermicelli are boiled with milk and sweetened with sugar. Some called it ‘pal payasam’. Some use Dal or wheat instead of rice and add jaggery and coconut milk. After taking off from the flames, it finally added spices, making a delicious dish. During every festival season, this is one of the critical Kerala food items; people traditionally serve Payasam at the time of food serving.
Tapioca Fish Curry:
The leading non-vegetarian food is Tapioca Fish Curry. The people feel an interest in eating this dish. It is one of the spicy dishes along with other famous cuisines. Kappa and Meen curries are other delicious Non-vegetarian dishes made with garlic paste and red chillies and seasoned with mustard seeds and curry leaves.

Kozhikode food is a fusion of cultures and history
Kozhikode's heritage of culinary delights is largely the fallout of foreign influences, of those hordes of seamen who landed on its coast over the past several centuries. The Europeans, the Chinese and the Arabs thus bequeathed a food culture to the place which blended with and enriched native flavours.
Apart from this foreign contribution, the land became home to diverse people who came in from the northern parts of India and other southern states. Hence, Kozhikode became one of the rare places in India where a multicultural food platter came to be served. It's this plurality of cultures and their food heritage that's made Kozhikode so splendorous a place for the best bites one could ever get. It's a veritable foodie paradise.

Of all the cuisine, there’s perhaps nothing to match the diversity and identity of traditional Mappila cooking, a lot of which came from the ancestral kitchens of the “Thekkepuram” tharavad that stood overlooking the waters of the Kallayi river and the Arabian Sea. The aroma of these dishes wafted across the seas and is a culinary power to reckon with today, with such Mappila delicacies like Kozhikodan halwa, pathiri and biryani conquering global palates.
This romance with food that emanated from Thekkepuram has seeped into every sphere of Kozhikode’s life, be it while celebrating the grand entry of the “puyappila” (new bridegroom) or the feasting before Ramadan morning fast.
Thekkepuram still retains its exclusive rights to provide a variety of “appams” for the Idiangara Sheikh mosque’s “appa vanibha nercha”, a four century-old celebration during which people in their hundreds, irrespective of caste and creed, join in; and also for the pre-fast Ramzan feasting. These specials take us to the unknown flavours and mixes of Thekkepuram, the secrets of which are the special prerogative of the ancient family.
There’s a delectable list from Thekkepuram to choose like chattipathiri, neriya pathiri, kannuvecha pathiri, meen pathiri, irachi pathiri, chippiappam with clam, unnakkaya with ripe bananas, kadukka nirachatum paal vazhakka, poricha pathiri, bun nirachathu, pazham nirachathu with scraped coconut, bananas, and kismis, and a chicken-wheat combo called aleesa. The list is endless.
Kozhikode has egg specialities aplenty like “muttamala” wherein the egg yolk is fried and then made to form thin strips like in idiappam. The muttasurka is something that looks like the thick icing on cakes. The muttamarichathu is a thickly beaten mix of eggs, sugar and ghee.
Chatti Pathiri
There’s yet another deadly combination of goat, goat-head and leg with chicken and eggs. This is how it’s done. The chicken innards are removed and the insides cleaned. The hollow is then stuffed with masalas and boiled eggs and the opening stitched up. The outside of the chicken is then smeared with masala and stitched into the inside of a goat shorn of its intestines and head. More masalas are added inside and the complete part is sewn up. This is then deep fried and served when a whole lot of people sit down together to partake of a meal. This again is an exclusively special-occasion dish.
Thari kanji, samosa, cutlet, kilikoodu, kaypola, momo, macroni and cake are all Ramzan season savouries.
The Mappila touch is evident in their special fish curries. A lot of chillies, coconut milk, ground coconut and tamarind are used. Of special mention are the prawn dishes.
Kozhi mulakittathu, beef varatiyathu, kozhi nirachathu, kozhi stew, kozhi korma, goat head curry, mutton stew, liver fry, brain fry, diverse biryanis, kafsa and manthis are part of a kaleidoscope of Kozhikodan dishes.
The after-meal “kawa” served during Muslim celebrations is one delicious brew high on its sweet-strong combination. Aval (rice flakes), water and the very famous Kozhikodan suleimani are also served on these occasions.
Other special dishes
There are other typically traditional Malabari veg and non-veg dishes. Of these, the sadya served with dishes aplenty holds pride of place. The true Adivasi Theeya and Paniya food deserves special mention. These again are exclusive to Kozhikode.
Some of the very delicious and very special Theeya dishes include puttu, puzhukku, shark curry, eenthupidi, thirandi mulakittathu, sharkara payasam, ari unda, elavan thenga arachathu, chammanthi, matta rice dosa, koorikappam, neyyappam and kozhi chuttathu.
Some of the Paniya dishes are mulayari payasam, thina payasam, chama payasam, dry ginger coffee, kappa-kanthari-chammanthi, kavath puzhukku chammanthi and kumbil appam, chappu curry, thali curry, crab curry-kappa, crab chammanthi, kalakal appam, kanthari chammanthi, idichakka thoran, kappa, ragi puttu, naadan kozhi curry, fresh water fish curry and dishes with kappa, colocasia and purple colocasia.

Dishes from alien shores
The Gujaratis, Bhatkalis, Anglo-Indians, Iyers, Bohras, Gowda Saraswat Brahmins, Syrian Christians, Goan Konkanis, Pathans, Marwaris, Sindis and Iranians lend their particular flavors to Kozhikode, the land they accepted as home. A lot of them have lost their purity and have melded with local flavors and mixes. They are today’s fusion food. But they cannot be termed vintage Kozhikode.
Some of the very popular Gujarati-Kozhikodan dishes include paani puri, bhel puri, dhabeli, chappathy, dhokla masala, mohanthal gandhiya,ladva, masala muthiya, masala kichdi kadhi, khandvi, thepla, patraveliya, basanthy, ghodpadi, sev khamani and a few others.
As for the Anglo-Indian contribution, the popular dishes are coconut rice, ball curry, devil chutney, beef mince-patties cutlet, braised ox tongue, hearty oxtail onion soup, beef flank roast, fish croquettes, liver fry, chicken roast, pork vindaloo, marrow bone soup, arrack shop beef fry, greg shop beef fry, pancakes, meat-puli fry and grape vine. They are some of the tastiest additions to Kozhikode’s heady menu.
Among the Bhatkali recipes are bafakki poli, masala poli, khubwa poli,tharia poli, shayya biryani, chicken biryani, shinona nowra, madkaliya, saathpathar, masala idey, beef maas, chicken koyla, dry roti, kichdi, haldi para nowri, pawan-poli koosske-chicken curry, kaila halwa, wheat halwa, godhan, red chilly paste, one bite, showpa pana pudding, chana battana, appa gadiyo and kote.
Coconut rice
Of the popular Gowda Saraswat Brahmin recipes Kozhikode has openly accepted are kotta, undi, surnali, patrovodo, adsara polo, kirla polo, mushti polo, dudni panna fodi, gode kananka fodi, kadgi fodi,biscot roti, gulla fodi, goli bajji, baboos, and paanak.
From the Bohras have come mutton curry chawal and dhansak from the Parsis.
Every street and corner of Kozhikode is a foodie’s nook. There are trays of sweets to choose from and fusion food for the hep crowd. The sweets street, the beach and those vendors with their carts selling peas masala, pickles, ice urathi and sherbet make Kozhikode a live canvas of food freaks. 1. Puttu [Kerala rice cakes] with curry dip
Puttu is a breakfast dish accompanied by a curry dip called Kadala curry, distinct from the conventional curry that the locals have exported to the world. Instead of curry powder though, Kadala curry dip is made from black chickpeas cooked with coconut gravy. It adds flavor to the bread called “puttu”, cooked in a cylindrical mold from a batter of rice flour, grated coconut, and water. No wonder why foodies have called it soft rice puttu. It is one of the few healthy breakfast options available that do not compromise the need to fill up your tummy and fuel your activity whether at school or at work.
2. Appam [disc-shaped rice cakes]
This bread is occasionally interchanged with the puttu when dunked over the Kadala curry dip since it is also made up of rice flour. While it can be eaten on its own, having some curry dip to taste, helps. Most locals have the appam as a side dish for their main meals like vegetable curry, mutton stew or other meat-based culinary fares. Locals would highly recommend appam cooked fresh with its edges toasted to a crisp. 5. Idiyappam [rice noodles]
The common misconception about Indian cuisine is that they don’t have noodles. Until they get to Kerala and get served Idiyappam. Idiyappam is Kerala’s answer to Chinese rice noodles consisting of rice flour cooked in boiling water and formed into a dough. That dough is then put through a mold that pushes it out in noodle form. The final form is more like pasta but paler. The usual topping is hard-boiled eggs immersed in spicy curry sauce.
6. Pazham Pori [fritters]
Fried banana fritters Kerala-style? Some may correct you eventually from calling them bananas and mention that they are actually plantain sliced lengthwise, coated in flour and fried. The flour makes the fritters flavorful and chances are that the flour is unique to Kerala. Trying to fry your own fritters might taste different simply because of the kind of flour used. The locals though love the fusion of the flour and the ripeness of the fruit fried to golden brown perfection. Best enjoyed with some ginger tea, also found in Kerala.
7. Parotta [multi-layered pancake]
Sounds Italian but it’s actually Keralite. Think of dough cooked in long strips, flattened on top of the other with a rolling pin and cooked in a frying pan. So it’s a thicker version of the sourdough used by the Middle Easterners for their shawarma or the bread used by other versions of Indian cuisine for their samosa. This is then topped with beef curry as a filling before rolling it up to be served. The spicier the beef curry used as a filling, the richer the flavor of the parotta.
